| dc.description.abstract | Las enfermedades cardiovasculares son una de las principales causas de muerte en el mundo, y una alimentación saludable es clave para su prevención. Este proyecto evalúa la viabilidad de estrategias tecnológicas para la conservación y distribución de alimentos más saludables en poblaciones urbanas de alto riesgo en Bogotá. Se revisan estudios que analizan la relación entre los procesos industriales, la calidad nutricional y la salud cardiovascular, con énfasis en métodos no térmicos como altas presiones hidrostáticas (HPP), campos eléctricos pulsados (PEF) y ultrasonido de alta potencia (HPU). Estas tecnologías permiten reducir el uso de aditivos y conservantes, mantener las propiedades organolépticas y prolongar la vida útil de los alimentos. Los resultados aportan criterios para seleccionar la técnica más adecuada en función de su viabilidad económica, ambiental, legal y social, contribuyendo a reducir factores de riesgo como el consumo excesivo de sodio y grasas trans. Así, el proyecto ofrece estrategias concretas para la industria alimentaria que pueden favorecer una alimentación saludable y sostenible en la población objetivo. | spa |
| dc.description.abstract | Cardiovascular diseases are one of the leading causes of death worldwide, and a healthy diet is key to their prevention. This project evaluates the feasibility of technological strategies for the preservation and distribution of healthier foods in high-risk urban populations in Bogotá. It reviews studies that analyze the relationship between industrial processes, nutritional quality, and cardiovascular health, with emphasis on non-thermal methods such as high hydrostatic pressure (HPP), pulsed electric fields (PEF), and high-power ultrasound (HPU). These technologies help reduce the use of additives and preservatives, maintain organoleptic properties, and extend food shelf life. The results provide criteria for selecting the most appropriate technique based on economic, environmental, legal, and social feasibility, helping reduce risk factors such as excessive sodium and trans fat consumption. In this way, the project offers concrete strategies for the food industry that can promote healthy and sustainable diets in the target population. | eng |
