dc.description.abstractCorrelacionar la estrategia seis sigmas con la reducción de pérdidas por sobrepeso en la referencia de chorizo EK producido en una planta de derivados cárnicos en la ciudad de Bogotá fue el objetivo de este estudio investigativo. Se tuvieron en cuenta los desarrollos teóricos de la herramienta seis sigmas de autores como Pérez y García (2014), Herrera, Pérez y Venecia (2017) y Santana, Lanier, Fernández, Suarez y Puerto (2017). Igualmente, lo planteado por la FAO, Fedegan, DANE, INVIMA sobre la carne y sus derivados y las industrias dedicadas a su producción. La metodología de investigación utilizada fue de tipo correlacional cuantitativo y diseño no experimental transversal, que tiene como propósito, según Salkind (1998), mostrar o examinar la relación entre variables o resultados de variables, pero sin explicar que una sea la causa de otra. Se manejaron dos variables (cualitativa y cuantitativa), los instrumentos de recolección de información fueron tablas y encuestas al personal de mejora o desarrollador de productos. Entre los principales resultados se puede mencionar el cálculo del coeficiente de correlación entre fases del seis sigma y reducción de pérdidas por sobrepeso de -0.93, evidenciando que existe una relación casi perfecta negativa, es decir, la variable reducción de pérdidas por sobrepeso disminuye en función del aumento de la variable nivel de implementación de las fases del seis sigmas, existiendo así una tendencia lineal con pendiente negativa. Validando la información (de julio a noviembre de 2018), las pérdidas económicas fueron alrededor de $10.754.498.85 y finalizando noviembre en $0.00, coincidiendo esto con el cierre de las acciones del seis sigmas. Se observa además que el porcentaje de sobrepeso se reduce al 0.0% obteniendo así cero perdidas en unidades y en COP. Se concluye entonces que las acciones implementadas por cada fase del seis sigmas en la línea de producción contribuyen a la reducción de pérdidas por sobrepeso de manera significativa.spa

Among the main results we can mention the calculation of the correlation coefficient between phases of the six sigma and reduction of losses due to overweight of -0.93, showing that there is an almost perfect negative relationship, that is, the variable reduction of losses due to overweight decreases in function of the increase in the variable level of implementation of the phases of the six sigma, thus existing a linear trend with a negative slope. Validating the information (from July to November 2018), the economic losses were around $ 10,754,498.85 and ending November at $ 0.00, coinciding with the closing of the six sigma shares. It is also observed that the percentage of overweight is reduced to 0.0%, thus obtaining zero losses in units and in COP. It is concluded that the actions implemented by each phase of the six sigma in the production line contribute to the reduction of losses due to overweight in a significant way.eng
