| dc.description.abstract | This degree project evaluates the use of orange peel as an alternative biotechnological input and nutrient source in the fermentation process for brewing craft lager beer. The research addresses the environmental challenges posed by agro-industrial citrus waste accumulation while aiming to reduce production costs associated with commercial yeasts. By characterizing endogenous fermentable substrates (free sugars, pectin, and cellulose) and biologically active compounds (flavonoids and essential oils such as limonene), it was found that orange peel supports the metabolic activity of Saccharomyces pastorianus. Laboratory-scale formulations identified an optimal ratio of 60% orange peel to 40% yeast, yielding a viable craft beer with balanced sensory characteristics (golden hue, moderate bitterness of 18–24 IBU, and citrus notes) while adhering to standard physicochemical quality parameters. This work confirms the technical and environmental feasibility of integrating citrus waste into brewing, supporting green chemistry principles and Sustainable Development Goals (SDGs 9 and 12). | eng |
